Tomatoes.


I can’t get enough of fresh tomatoes.  I slice, I chop, I eat them whole, and I love to create easy, fresh salads to accompany any main course.  Today’s lunch salad wasn’t anything outrageous, just simple ingredients brought together with the right flavors.
Tomatoes & Cukes:
  • 1 pint grape tomatoes, halved
  • 1 cucumber, peeled, sliced crosswise
  • 2 basil leaves, torn
  • 1 green onion, chopped
  • 1 tsp olive oil
  • 2 tsp red wine vinegar
  • fresh ground sea salt & pepper
Toss it gently and enjoy at room temperature.  Simple. Clean. Delicious.
