Grilled Corn. And Tomatoes.


I love corn & tomato salads & salsas but have always used canned or frozen corn. Today I decided it was time to grill some corn. Success!  The smoky flavor of the grilled corn plays so nicely with the rest of the flavors in this salad.  You can toss the corn on the grill at any time before making the salad and you’ll be ready to mix & go!
Grilled Corn & Tomatoes
  • 4 to 6 ears corn, grilled & cut from cob
  • 2 tomatoes, chopped
  • 1/2 cup red onion, chopped
  • 1 T olive oil
  • 1 T lime juice (fresh preferred)
  • 3 T cilantro, chopped (more to taste)
  • sea salt & pepper, freshly ground, to taste
Gently toss all the ingredients together. Enjoy at room temp or chilled. This can be eaten as a side salad or as a salsa. Play with the ingredients to get your perfect flavor!
