Sometimes I Just Get Lucky.


Dinner tonight was one of those moments when everything just came together.  Grilled chicken with fresh basil (cut slits in the chicken and insert fresh basil), fresh corn & tomato salad, and a sauteed spinach that just came to me as I stood over it…
Sauteed Spinach with Pecans
  • 1 bag fresh spinach
  • 1/3 c pecans, cut into pieces and toasted
  • 2 tsp olive oil
  • 1 T balsamic vinegar
Toast the pecans, then quickly sauté the spinach in the olive oil.  Next, add the pecans to the spinach, toss, and add the balsamic vinegar. Toss quickly in the pan and enjoy! Perfect spinach with flavor and crunch. There were no leftovers tonight!
